These crunchy breaded, oven-fried zucchini chips taste like they’re fried yet baked and amazingly tasty. These chips make a healthy substitute for French fries or potato chips.

To make them even more healthy, we added to the bread mixture amaranth popping - our super food - which we wrote in detail in our blog. It works great in this recipe because of it's cunchy texture.

To make the subtle zucchini flavour come alive, add red, sweet paprika powde and chilli powder to make a great twist and add colour to the dish. Feel free to experiment with different spices.


1/3 cup - 30g dry breadcrumbs

1/2 cup - 10g amaranth popping

2/3 cup - 20g grated fresh mature Cheddar cheese

1/4 teaspoon seasoned salt

1/2 teaspoon garlic powder

1 tablespoon sweet paprica powder

1 teaspoon chilli powder (1/2 if you are not a fan of spicy!)

1/3 cup - 80ml coconut milk

1 egg

1 big zucchini - 220g (30 slices)

Cooking spray

Combine first 7 ingredients in a medium bowl, stirring with a whisk. Place milk an egg in a shallow bowl and whisk toghether. Slice zucchini into 1/3 inch slices and dip each one in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray. Place rack on a baking sheet. Bake at 180C for 25 - 30 minutes or until browned and crisp. Serve immediately.

You can serve them with tzatziki or simply with yoghurt and garlic, sweet chilli or tomato source.

These spicy, crispy oven chips are great option for summer parties, as well as a healthy snack for your children.

Because of no added fat and becuase of baking them - not deep frying - we saved lots of calories ladies.

Each Chip = 15 kcal and 0.8g protein
