PEAR AND APPLE SALAD
I can not help but notice pumpkin sneaking from around each corner but I'm trying to hang onto the summer and enjoy the strong sun rise which is keeping me in the summer mood. So this week, I chose a healthy, hearty salad for everyone to enjoy.
There are more new vegetables appearing on the market stalls everyday. This season has on offer other beautiful fruit and vegetables such as butternut squash, cabbage, corn and my personal favourite – apple.
This salad is designed to keep the calories down and nutrition high. Full of leafy greens, nuts and super foods such as Goji berries add an extra punch to spoil your body with goodness. Combination of toasted sweet nuts, slightly bitter chicory and a sweet apple and pear will kick your taste buds for sure.
Ingredients: (serve two people)
1 chicory 100g
Mix leaves lettuce 150g
1 small pear 180g
1 small apple 180g
1 spring onion 20g
Pumpkin seeds 10g
Goji berries 20g
Sugar 1 teaspoon
Butter 1 teaspoon

1 teaspoon of olive oil (optional linseed oil, rapeseed oil)
1 teaspoon of honey
1 teaspoon of mustard
Pinch of salt
Good squeeze of lemon

Chop and roast your nuts and seeds on a dry frying pan until lightly golden, then add 1 teaspoon of sugar and butter. Fry until become caramelized. Add goji berries to the dressing, so they soften a little bit. Cut the apple and pear into stick shaped pieces. And the rest is easy. Mix all the ingredients together and pour the hot sugary and buttery nuts on the top of the salad.
